I need some help from my friends here. I have a date to do all the finger type treats being served at the opening of a small ish law office in 3 weeks. It is all up to me, they told me to just do what I do best. What would you make? I would love input as to what you think is appropriate. I know all my friends here won't let me down w/ ideas!
If it was me I would make some cake balls, chocolate chip cookies and some fruit tarts. The fruit tarts are always a big hit when I make them and very easy to make.
I use a 3 ½” round cookie cutter to cut out the pie crust and put that in my muffin tins. Bake at 325 until light golden brown. Take 1 box of instant vanilla pudding mix add 1 cup of cold milk, mix until thick then fold in 1 cup of cool whip. Spoon into cooled tart shells. Top with a slice of strawberry, slice of kiwi and a mandarin orange or blueberry. Drizzle onto of the fruit warmed apricot jelly and then warmed blueberry topping. Refrigerate until ready to serve. Easy and Delicious. (I’ve even made the shells ahead of time stacked them in a gallon size baggie and placed in the freezer until the night before the event when I finished the tarts.)

I agree with the suggestion of cake balls since they can be done in any color or theme. You could even dress them up with the logo of the firm either piped on or printed on edible frosting sheets. You may also want to try:
1) pecan tarts in 5 inch tart pans with removable bottoms. Cut wedges for smaller portions.
2) mini cheesecakes with fruit topping done in Reynolds foil cupcake liners. I freeze them & let them thaw at the venue so they'll stay food safe.
3) marshmallows dipped in coating chocolate on sticks with sprinkles.
4) mini caramel apples or apple wedges on sticks.
5) caramel corn in cone shaped cups.
6) pretzel logs dipped in coating chocolate with sprinkles or toppings
Some points I usually consider are making sure that there is variety in the color, texture & shape of the treats and that there are varying heights to the serving platters, even if you have to use dummy boxes under draped tablecloths.
