Hi everyone, i am wanting to make a Topsy Turvy Cake for my sister in laws birthday and was wondering what type of cake would be best eg: Victoria sponge/ Maderia etc, please advice

IMO, a sturdy cake carves best.

Pound cake is my go to for carving.

I use the WASC doctored versions and have had good luck with them.  I am not a fan of making topsy turvy cakes but I do know they carve better when chilled and if you use ganache to cover them it makes them sturdier.  I bought Sharon Zambitos Topsy Turvy DVD and it is really good instruction. 
Thankyou to you both, i will have a go this weekend and see what happens.
