Cake Decorating Community - Cakes We Bake

Hi everyone!  My sister's 40th birthday is coming up next weekend, and I'm attempting to bake her a 3d Coach purse cake.  I am using fondant to cover the cake.  She originally requested a pound cake, which was perfect, but changed her mind two days ago and now wants a chocolate cake with some sort of banana filling.  So now I'm in desperate search of a sturdy enough chocolate cake (that of course isn't too dry) that will prove to be stackable and can handle the weight of the fondant.  Additionally, I need to figure out some sort of workable banana filling that will fit the bill.  I was thinking maybe a banana cheesecake filling or just a plain ol' banana buttercream.  Any input would be greatly appreciated!!  ~Lynn

Try chocolate pound cake. There is a recipe on Wilton.com

Here is a recipe for a banana cream filling that I have used

Banana Cream Filling
Ingredients

* 1- 8oz pkg cream cheese softened
1 1/2 c whipping cream
1 pkg instant Banana Pudding mix
1 tsp vanilla extract
* 1/2 cup granulated sugar


Instructions
1: In a large mixer bowl cream sugar and softened cream cheese.
2: Add pudding mix and extract; mixing just till combined.
3; Slowly add in the whipping cream; mixing till throughly combined and fluffy.
You can change up this recipe by changing the pudding flavor and extract. I love to use chocolate pudding mix with vanilla extract..
