I LOVE strawberry Rhubarb pie. Its seems you can get it easily here in the US, in Canada, it was a regular occurrence.

This week a local grocery store actually HAD rhubarb and on sale - whooo whooo!! But I've never made it myself. Has anyone made it before and has a tasty recipe they'd like to share?

I know I can find one online, but it'd be nice to have one that can be recommended by fellow bakers. :D

We do a strawberry rhubarb tart here at my store that is very popular.  The filling would work great for a crumb topped pie one recipie yields approx 8" two pies:

 

4 stalks rhubarb cut length wise and rough chopped

2lbs strawberries

2/3 cup sugar

1 tsp vanilla extract

1 tbsp red wine vinegar

cinnamon to taste

1/2 cup water

 

Place all ingredients in saucepan and simmer over low heat until even mushy consistency.

 

Place in pre-baked pie shell fill approx 3/4 full and top w/ your favorite streusel recipe, bake at 350 to brown top.

JJ - I just sent you a message about the filling seeming a little watery...please help! I could add corn starch or such but it wasn't in your recipe so thought I'd check with you.

 

Yeah, it did occur to me that for a pie you might want to thicken it up with something... sorry.  I'd probably just add a little roux.
