Thank you in advance :)

Always use boards to stabilize. Dowels by themselves are useless

How high is the actual shopping bag cake part? Is your question whether or not you should seperate the shopping bag cake between cake boards or just a general need for cake boards in between tiered cakes? Tiered cakes need that stability otherwise they'll cave right in to each other, plus you kinda need the cakes to easily seperate from each other when they're ready to be cut. If your question has to deal with just the shopping bag cake part of it and your worried about the cake keeling over because its going against the force of nature I would use a good stable cake recipe, preferably one meant for 3d cakes. A couple dowels would help hammered to pierce into the below cake board, For the dowel that stabilizes all the tiers together to be one complete piece I sharpen the end of it with a pencil sharpener than I hammer it straight through making sure it pierces all the cake boards involved. Hammerings actually my favorite part!! LOL. Makes me feel barbaric!!!! Take that!!
