I have an order for a diabetic cake. Does anyone have a receipe for one. Thanks.

Hi Ruby, I had to make one a while back, and I just used the Pillsbury cake mix and icing. Normally I would never use canned icing, but the person who ordered it even suggested it. I was going to use a recipe that I have in my zylitol cook book, but zylitol is so expensive, that I just used the canned icing instead. If you are interested in any of the recipes that I have in this cook book, let me know and I will copy them down and send them to you. It has everything from Chocolate butter cream, chocolate ganache, coconut pecan, creme de menthe cream cheese, lemon cream cheese, maple butter pecan, mocha cream cheese, and peanut butter cream cheese. Whoops, I missed a few! Seven minute, vanilla cream cheese, and vanilla custard. There are 19 cake recipes in this book too. Let me know if you are interested. :o)
Thanks Linda. Is this book for diabetics. The receipes dosnt sound like they are sugar free. I dont want to put the poor guy in a diabetic coma. LOL

Xylitol is a product made for diabetics. There is no sugar in any of the recipes, just Xylitol. Here is a sample of one of the recipes:

Chocolate Butter cream Frosting

6 tablespoons unsalted butter, softened

2 cups powdered xylitol, sifted  (noticed that I was spelling xylitol wrong in my first post!! Duh!)

1/2 cup unsweetened cocoa powder, sifted

2-3 tablespoons fat-free milk

1 teaspoon vanilla extract

Beat butter until creamy. Combine powdered xylitol and cocoa powder and gradually beat into butter alternately with milk until frosting reaches the desired consistency for spreading. Stir in vanilla extract. Yields 2 cups frosting

Calories: 38 per tablespoon

carbs: 13.2g

fiber: 0.4g

fat: 2.3g

sodium: 1.3g

net carbs: 6.6g

Thanks Linda, where can I find the Xylitol. I've never heard of it before. Perhaps I can shop online to look for it. Do you have one for yellow cake and frosting. Thanks a bunch.
I'm going to guess you'd be able to find xylitol in health food stores in bulk.  I was just reading, however, that it is highly toxic to dogs, so if you have a dog make sure they don't get into it (3 grams can kill a 65 lb. dog! O_O!).
Yikes! thanks Eileen. I'll make sure I'll pass that info to the customer as well. I have an order for a four tier 50th wedding anniversary cake. They want the top tier to be for the diabetic husband. I'm glad its just a small 4 inch cake. Thanks again.

The closest thing to a yellow cake that is in this cook book, is a sponge cake. Ruby,  I just got in my e-mail that  Xylitol USA is now making the closest thing to powdered sugar possible. Type into your browser that name: Xylitol USA. It will bring up their site and you can do some exploring.

Also, type into your browser Xylitol Yellow Cake Recipe and see what you come up with. If you can't find anything, I do have this sponge cake recipe.

Eileen, I have tried in our area to find it in health food stores to no avail. Natures Sunshine on line carries it, but it is really pricey! That's why I started getting it from Xylitol USA, but it used to be called Emerald Forrest. They sold it out to Xylitol USA.

Thanks Linda. Went to the website. Its 30.00 for a 5 pound bag. Costly, but I'll put the cost in the cake order. Thanks so much for your and Eileen's help.
I use Splenda. Is there something wrong with it? No one has mentioned it so I am thinking maybe something wrong.
I read that splenda has an after taste? I dont know. I've never worked with non sugar before. My first time making a diabetic cake.
Anything with aspartame or sucralose is supposed to be very bad for your health. I'm not a diabetic, so I don't have to use anything, unless I want to knock off this extra weight, (Which, obviously I do need to do!) but if you are a diabetic, I can imagine it's got to be tough finding a good alternative without compromising your health in the process. If you 'google' bad side affects of aspartame, sucralose or Splenda, there is plenty to read.
