Niska - use your favourite cake recipe and just bake as cupcakes instead.  Cook for a little less time, but this is what I do and they never fail.

I just made cupcakes 2day. They were moist & delicious.  My favorite white cake recipe.  As Katy says, just baked a less time than a cake.  :o)
