Cake Decorating Community - Cakes We Bake

I checked back thought the past recipes here and didn't see a pound cake with pineapple listed, so here's a recipe I've used for years. It's moist and delicious. Hope you'll try it. This cake starts out in a cold oven (325 degrees)

1/2 cup vegetable oil
2 sticks butter
2 & 3/4 cup sugar
6 large eggs
3 cups all-purpose flour
1 teaspoon baking powder
1/4 cup milk
1 teaspoon vanilla extract
3/4 cup CRUSHED pineapple plus juice (do not drain)

Cream sugar, butter, add oil and eggs, mix well.
Stir in sifted flour & baking powder along with milk, add vanilla.
(Do not over beat) Stir in crushed pineapple with juice. Mix well.
Grease & flour 10" tube pan. Bake at 325 for 1 & 1/2 hours.

TOPPING;
1/2 stick butter
1 & 1/2 cups powdered sugar
1 cup DRAINED crushed pineapple
Mix and pour over HOT cake

This sounds delicious, Betty.  We are huge pound cake fans so I will try it for sure.  Thanks for sharing.
