Oatmeal cake recipe

 Cake Recipe

• 1 1/2 cup boiling water
• 1 cup instant oatmeal
• 1 cup white sugar
• 1 cup brown sugar
• 1/2 cup butter
• 1 1/3 cups flour
• 1 teaspoon baking soda
• 1 teaspoon cinnamon
• 2 eggs
• 2 teaspoon vanilla extract
• 1 cup raisins and/or walnuts,  (optional)
• a golden apple peeled and chunked (small) is also delicious in this cake

Icing Recipe

• 8 oz cream cheese
• 8 oz unsalted butter
• 4 cups sifted powdered sugar
• 2 teas clear vanilla

DIRECTIONS

1. Pour boiling water over oatmeal and set aside to cool.
2. cream sugars and butter.
3. add oatmeal, flour, baking soda, cinnamon, eggs and vanilla to the sugar mix.
4. bake at 350 degress for about 30-40 minutes in a greased and floured 9x13 pan or makes about 20 cupcakes. allow to cool before frosting.

To make the frosting:

cream the butter until smooth. add the cream cheese to the butter and mix until smooth. add powdered sugar one cup at a time. add vanilla.
