my sons first birthday is in 18 days and i'm making a chocolate "one" shaped cake with buidling blocks with stabalized whipped cream/cream cheese frosting in blue and white (or possibly more colors) i want his letters to be neat but i dont think i can freehand neatly. this is my first homemade birthday cake. i need everything to be all natural or as natural as possible. i dont know if i should use colored sugar or sprinkles or m and ms or what to write the letters on the cake and the blocks. i dont like the hard crunchy letters sold in the grocery store. i think stencil and somehthing else might work well but what kind of stencil do you use on cake? i dont like buttercream icing either

You might try fondant for your decorations. It is easier to work with and not too hard to cut out. Print your letters out on a piece of computer paper and use them as a pattern.
I would ice the cake then put it in the freezer until the icing is stiff the use letter cookie cutters and mark the cake with the letters then pipe icing over the letters. the letters will all be the same size and easier to pipe on if you have the marks as a guide
Jeri what do I cutfondant with? Victoria what do I mark the cake with? Are there food stencils sold somewhere?

You can actually cut it with a scribe tool or an exacto knife. I use my scribe tool mostly because I like the way it cuts. Or if you have the cutters you can use them. Wilton actually makes a cookie cutter set that I know WalMart sells and there are 100 cutters in the box for not much money. They are great for someone starting out you can cut all kinds of shapes to decorate cakes with. There are cutters that are alpahbets available called Tappits but unless you have some experience working with fondant they can be very frustrating.

Is bc buttercream? Do I take the cake out of the pan first then freeze it then cut it then transfer it to my pretty plate to decorate? Should I buy some kind of cardboard? How do I decorate the blocks without hetting icing all over my hands?

Just a friendly warning... stabalized whipped cream is a real pain to decorate with, and since it's warm right now (unless it isn't warm where you are) it will be a SUPER pain.
