Hi, I am making my first wedding cake for one of my friend..I made her engagement cake and she and other guest love the cake now she is asking me to make her wedding cake. So I say yes to her but now I am really scared about the cake. I mean what kind of cake I should make. I need something that can hold the fondant. And she is getting married next month...I have really little time to decide...Please help me out if u guys have any good recipe that can hold the fondant very well please share with me...I am making 3 tier cake.... hope I will get some answers  from u guys....

What flavor did the bride ask for?.

I personally would go with a doctored cake mix since this is your first wedding cake....

is it going to be stacked or tiered?...most doctored cake mixes, at least in my experience, hold up well under fondant.

I always ask the bride and groom what their preferances are then bake them samples of 4 or 5 and they choose what they want. It is a lot of work but better they know what they are getting ahead of time.

that's a lot of baking just to offer one piece unless one has a shop &/or does many cakes a week.
I know we all have different methods of doing the same thing & this is what works best for me......
I found most people only take one or two bites of what is offered (at least at the tastings I did!) so I generally served them a piece about 1x1x2. With 3 of them on a plate it is about as much as a 'wedding cake serving' of 1x2x4; also makes a nice presentation and does not waste all that extra.
Usually I offered choco, white & 1 of their choices unless I had something else on hand (in the fzr). When I make samples I bake a 4", 5 or 6" round from batter of other cakes I am making that week. Then wrap them well and freeze. It keeps up to 6-8 months and tastes just as good, if not better than fresh out of the oven :)
If you are not a shop & are only doing this cake/tasting for one time it seems a waste of food, time & energy to bake 4 or 5 full sized cakes to give out 2 small pieces each. Some people bake up cupcakes but again each cake mix batch produces 24 cupcakes. Unless your family eats lots of cupcakes/cake it would all be wasted :( I also think cupcakes bake differently than a cake - can be drier so I didn't do that.

Tazkera...I think it would be wise to ask her how she imagines her cake to be....get colors and flavors and any decorations she likes and also get her budget...that is very important so you dont make a cake that she cant afford ....you will prevent alot of worries if you find out as much as you can before the wedding.

Have your friend search the internet for pix of cakes she likes to give you an idea of her thoughts. It would help you so much. You may not have the skills to make one very similar but you can get a sense of what she likes.
I do bake cupcakes as samples and I do it about 4 to 5 times a year. I know how many I have coming up and I let them know when the sample days are and I do samples for 4 to 6 at a time. So it really is not that much work but it does take some planning ahead and I always get a lot of compliments on them. I do make sure that they are delivered the day after I make them. I have some plastic cupcake carriers that I purchased at Costco and they keep the cakes very fresh. It works for me and have used this method for years. If you don't do many cakes it can be a lot of work though.
Karen Marie u give me a good idea ...I will definitely ask her about the price range and she said she is going to give me a cake picture that what kind of cake she want so I don't worry about that any kind of design I can pull out...And I get the recipe for the cake from the web site that was biggest concern .... Thank you all for ur good suggestion I really need all of ur help and support ... :)

Ok so I all ready have the picture that she want for her wedding..it's a really simple wedding cake..all white cake with fresh roses around it for 100 ppl. but now the problem is how I am gonna put the fresh flowers in the cake??? I mean I have to put the stem in side the cake...Is that safe? or there is other way to do that...on top tier I can do something but bottom tier and the middle tier how I am gonna stick the flowers with out putting it in side the cake?...Any advice? please help me...
