Every time I make marshmallow fondant, I tend to get small air bubbles in it, no matter how much I knead it! Just wondering if anyone has any tips for me how to get it really smooth without bubbles. I usually mix by hand as my mixer is not strong enough to cope with the mixture. Please help.

I always get little bubbles too....started using less water (just a fraction over 2 T) and then let it sit overnight or at least 8 hours. Warm slightly in microwave and then knead again till smooth, and the bubbles go away. Hope this helps!

Thanks ill try that.

I too leave my MMF for 24 hrs before I re-knead it and use. Sometimes I have to add a bit more icing sugar, sometimes a bit more shortening. Depeneds on the weather on the day I make it. MMF always needs time to rest for best results.    :o)
