Anyone have a great lemon cake recipe.

I use the WASC basic recipe, change the cake mix to lemon, use lemon pudding and add lemon extract. I use the recommended amount for a light lemon flavor or add up to a tablespoon of extract for an extra lemon-y flavor.
This is Cakepro's awesome lemon cake recipe. I made it and it was a huge hit!

Moist Fragrant Lemon Cake
1 Box DH white cake mix
1 cup all -purpose flour
1 cup granulated sugar
1 box Jello instant lemon pudding mix
1/2 tsp salt
4 whole eggs
1 1/3 cup water
2 TBL vegetable oil
1 cup sour cream
1 tsp clear vanilla extract
2 tsp lemon extract
Zest from 2 large lemons

Add ingredients to mixing bowl and mix as usual2-3 minutes. Pour into greased pans with a greased flower nail in the center of each pan. Bake @ 325. Cake is done when a tooth pick has some crumbs clinging to it.
Oh- I forgot to add:
If I want to add a zingy buttercream to top of this cake, I make a standard half-butter, half-shortening buttercream with lemon extract and about half a package of Kool-Aid unsweetened lemonade mix.
The other day I made this cake and used the juice from 2 lemons I zested in addition to the other ingredients, and it was so wonderful.

Yes it is Wendy. Think I used either Minute Maid, or a store brand on sale. Doesn't really matter, any frozen lemonade will do.

You will love it. Made it many times..2 as wedding cakes. Went over really well...

June what kind of lemonade drink mix? Like the little pks of koolaid lemonade? or the packs with sugar already added (which I couldn't find) I bought a can of lemonade mix since I wasn't sure.

Here in Canada where I live...I buy a 6 oz pkg of Old Time lemonade mix if I can't get the frozen. I can tell you Wendy, because it's still winter here, I can't always find the pkg or frozen on the shelf or freezer. It's considered a "summer product", so not all stores stock it until beginning of summer. If I use the pkg, I add a bit of red food colouring to make cake pink. You could also add fresh squeezed lemon juice or bottled..Real lemon juice too.
