What do you do when you want to ice a cake without using buttercream? i usually smooth buttercream over the surface of the cake before icing it, but someones asked if i can do a cake without the buttercream! what could i use to smoth and adhere the icing to instead?

I've seen a lot of cakes on here that have used smoothed or whipped ganache, but not sure how well icing adheres to it.

you can use whipped ganache...it works pretty well, but you have to work fast.
I've had the same request what do you mean ...no buttercream??? LOL!! Don't worry...you can heat up any jar of preserves or jelly until it gets to a thick soup....let it cool and strain any large clumps while it's still warm, and then cover the cake with the preserves...just be sure to find a complementary flavor and go with the seedless....it will make your life easier....also...ganache is also excellent under fondant or by itself....the preserves recipe is in any cake decorator book magizine and online on Wilton.com hope this helps!
