Cake Decorating Community - Cakes We Bake

How do I know what consistancy my icing is at? I was trying to make my own icing for the first time last night and it was either too thin or too thick. It got so frustrating. I bought the tools yesturday and I am trying to learn everyting. Needless to say I am new to cake decorating. Any help is appreciated.

That was really hard for me to figure out. I think it is trial and error, you have to figure out what works for you. Most of the time I use medium consistency. Thin for crumb coat or writing, thick for piping flowers and super stiff for the dam between layers.
my decorating teacher tought me that for stiff you should be able to slightly roll it around in to a ball but not stiff enough to make one med you shouldnt be able to do that and thin should be able to wiggle when you shake the bowl

It depends on what you are piping if you go to the www.wilton.com all this information is there.
