I want to make a ice cream cake for my son's birthday. Is there anything I can put in between the cake layer and then the icecream. It will be cake,icecream,cake,icecream and top cake. What I am worried about is the cake getting to wet before we are ready to cut it..

You could put a thin layer of buttercream frosting, or you could pour ganache over it and then refrigerate it so it has time to set up before putting the ice cream on top of that.
Ganache is yummy and brownies make a great cake layer!!! You can also use the hot fudge smuckers icecream topping. It is really good in an ice cream cake... Here is my favorite one to make: Vanilla icecream layer ( I like to buy the dairy queen soft serve vanilla) brownie layer, ganache or hot fudge topping, pecans, and a drizzle of caramel on the top.... mmmmm makes me want to make one right now
I just tried making an ice-cream cake, my first attempt and it looked and tasted pretty good. I made a chocolate cake, cut it into 4 thin layers, slice frozen ice-cream as you would cake, any flavor ice-cream ( I used vanilla bean) and place between layers. I ended up with 3 layers of ice cream and 4 layers of cake. I made sure cake was my top layer, then I placed in freezer for awhile. Once it is firmed up a little, I took back out and decorated with Peanut Butter buttercream icing. This cake was shared with my neighbours and they really bragged on it. BUT, I am new to all these different ways of making and decorating cakes and looking forward to reading other's ideas on this.. Good Luck:)
I have to make one of these for next week, my hubby always has an ice cream cake for his birthday. This will be the 1st year I'm making it tho. :o) I plan on using the smucker's hot fudge ice cream topping between the layers of chocolate cake and chocolate ice cream (yeah...he's a bit of a chocoholic LOL) but haven't decided on what to cover the whole thing with. (if I even cover it at all......)
Thank you for your help...I am planning on making this cake for my son who will be 33 years old..He like your hubby always wants a ice cream cake and this is my first year trying to do a home meade one...Good luck to you on yours..I think I am going to use the Smuckers chocolate a few people said use that..I was thinking also of softening the icecream and then put it in 9 inch cake pans and freeze again that way it will be the perfect shape for the cake...Hope this helps you...

I think I'm going to use my springform pan and bake the cake in that, then do the layer of fudge and then ice cream and back into the freezer till we need it. Good luck on yours as well!!! :o)
I use my springform pans when I do icecream cake. It comes out so pretty!
