Hummingbird Cake

3 cups Self-Rising Flour (or 3 cups Plain Flour, 1 tsp Baking Soda and 1 tsp Salt)

2 cups Sugar (granulated)

1-1/2 teaspoons Vanilla

1 - 8 ounce can Crushed Pineapple, drained

1-1/2 cups Oil (I use Canola)

1 teaspoon Cinnamon (I use more because I like it)

3 Eggs, beaten

2 cups ripe Bananas (with spots on the skin) - about 5 medium Bananas

1 cup chopped Pecans (not part of the original recipe, but I like Pecans, too)

The original recipe specifies a tube or bundt cake pan, baked at 325 degrees F. for one hour and 10 minutes.  I prefer to use 3 - 9" pans and bake at 350 degrees F. for 25 or 30 minutes.

NOTE: (3) 3" X 9" pans or (4) 2" x 9" pans / (3) shallow 9" pans may overflow

Mix all ingredients by hand and bake until tester comes out clean.

Cream Cheese Frosting

1 pound (16 ounces) Confectioners (Powdered, Icing or Caster) Sugar

1 - 8 ounce package Cream Cheese, brought to room temperature

1 stick (1/2 cup) Butter, brought to room temperature

1 teaspoon Vanilla (of course, I use more)

If anyone needs more details for mixing the cake or the frosting, please let me know and I will provide.  This is an old recipe from Southern Living Magazine and a long time favorite in the southern USA.

This is a great recipe (the same as mine) nuts and all. I use it all the time comes out perfect. I use 3- 9" pans too. My customers love it.

Yu-Hoo...,Thank You..., sounds perfectly scrumptious!  I love pineapples, coconut, Bananas, & cinnamon!  I just threw in the coconut. lol  And will, at some point, probably throw it in the cake too.   My taste buds are not very discerning, I eat just about anything. lol  When you get time Sandra, try the marshmallow buttercream, it's just melt in the mouth delicious.  And the texture is , well, perfectly smooooooth.

Do you bake all 3 in the oven at the same time?  And does it affect the temp used, or the time in the oven?

I do bake all three at once, Bonnie, and the time I listed for the 3 - 9" pans is the time it actually takes them to bake in my oven at 350 degrees F.  I definitely plan to try the Marshmallow Buttercream...soon!

Bonnie, your taste buds must be a lot like mine.....I love practically everything, even anchovies!
