Cake Decorating Community - Cakes We Bake

This year my son is having his birthday party at the community pool. He, like his dad, are both spoiled brats & only want me to make them a cake. I almost only bake cakes for their birthdays. I enjoy baking & decorating and guests always talk about how delicious the cakes are, but if I get them in the habit of cakes they will want them all the time! He wants a minecraft "cake" cake. It is a very simple design with 3 colors (white, brown & a little red) and in the game looks smooth like fondant. I've worked with MMF before, making him 2 transformers cakes BUT we lived in Alaska & the party was indoors. We now live in Hawaii & have the heat & insane humidity to battle with. Last year he had a BC frosted cake and even refrigerated up until serving and indoors we were pushing the limits of how long it would stay together. The BC tasted amazing but the party was in a warehouse. There were cargo doors open & huge overhead fans but by the time the kids got their pieces & we were packing up at the end of the party the BC was getting pretty soft (I'd say an hour after being pulled from their not so cold coolers). Of course it didn't stop us from eating leftovers once we got home & refrigerated it! 

I usually bake pretty close to the party but this year I would like to do as much as possible ahead of time (even completing it the weekend before because I also have food to prepare/cook day before/of for probably around 60 guests) but don't know what will be the best route to take for the elements. It's already in the 80's during the day & getting pretty humid. His party is April 18th so I know it will be a little "worse" by then. There is a refrigerator at the pool that it can go into but I worry about it sweating.
My thoughts/concerns are:
1. How far in advance can I make as much as the cake as possible & still be fresh, using MMF & fruit filling?
2. Can I refrigerate/freeze the fondant covered cake (worried ab the dyed fondant bleeding) and for how long ahead of time?
3. If I freeze it how far out should I take it to thaw?
4. He says he wants strawberry filling, any recipes for filling that doesn't require refrigeration?
5. How should I store the cake the day of knowing it will be in the mid-high 80's & outdoors? There is a fridge in our cabana but I don't want it to make the MMF sweaty & colors run.
6. With using 3 colors and making ahead how should I put together the sides without colors bleeding & keeping the seal of the fondant?

Any help/advise/game plan is highly welcomed, for my sanity and the success of his cake!

Ok. 1. I've baked my cakes up to 2 months ahead, and froze, well wrapped in plastic wrap and tin foil. Thaw out the day before you decorate.
2. & 3. You can freeze your fondant covered cake. Well wrapped. Your fondant/colours won't bleed. When you thaw out the cake, place in a cardboard box lined with newspaper. DON'T TOUCH the fondant or you will leave marks. Fondant will sweat, but leave it be, and will eventually dry out. Could take a hour or two.
4. Add strawberry jam on top of a thin layer of buttercream,or mix strawberry jam into your buttercream icing, adding more jam on top.
Gives you a strawberry filling that doesn't need to be refrigerated.
5. You could either take the cake frozen in the cardboard box, and let it slowly thaw out at the venue, or thaw cake out that morning, and put it in the fridge at the venue.
6. Sorry, I've never made a Mine Craft Cake, so can't give you advice on construction. I'd suggest you google tutorials.
