Hi all

How long before a cake needs to be delivered can it be baked. I normally use butter icing and sometimes fondant and use a family cake recipe?

I have baked fresh 2 days ahead of delivery.  For example, cake due Saturday, baked Thursday,  crumb coated & iced. Friday,  either finished in bc, or fondant, add any embellishments like flowers etc.

But I have baked a cake as much as 2 mnths ahead & froze it. Many do that here on CWB. Actually makes your cakes very moist.  Wrapped well in plastic wrap & tin foil, cake keeps well in the freezer. I am going to bake my daughter's b-day cake this wknd for the following wknd. I find it too much to bake, make icing & fondant all at once. Too tiring.  I can make icing & fondant & my cake is nicely baked & tucked in the freezer.

Yes it does thanks, how do you defrost it outta the deep freeze? I also find it too exhausting to do everything in one day, if u bake it 2 days before do u just keep it in the fridge or what?

Like June, I bake whenever I feel like it and then fill, wrap and freeze it.  You can take it out and defrost it easily 2 days before it's needed to start your decorating.

If you just bake and don't freeze, depends on the kind of cake it is.  If it's a sponge based one, then I would wrap it in cling film and put it in a tin or plastic box (something airtight).  If it's filled with any kind of dairy product (cream, butter icing etc), then it's better off at least in a cool environment, fridge will do.

If it has been in the fridge or freezer not effect the fondant I mean like the moisture?

Once you have iced & placed fondant on the cake, you don't need to freeze or refridgerate. As long as it is 1-2 days before delivery, you can leave on the counter. As Katy said tho, if your cake is filled with fresh ingredients, fruit, cream, after you have iced it should be refridgerated. Then fondant placed on day of delivery. If you have fresh fruit, cream in the middle and it is iced strictly in buttercream, keep refridgerated until delivery.
