I'm with Sherry on this one. If the woman wants a cheap cake, she knows where to go. That's not why you hire a cake decorator. It is an art. She's not paying just for cake - she's buying a custom work of art. When she gets compliments on the cake, you will get references. You don't want to be stuck giving them all a low price after finding out you hardly made any money. And, they will know how much she paid.

You can go to the Wilton site and there is guide there. It will give you how many servings each pan size/shape makes, whether party size or wedding size (there is a difference). It will also give you how much batter it takes to fill the pans and how much icing is needed. It's very helpful when you're just starting out (like me). Wedding cake slices are really thin, like 1", but most people cut the slices much larger. I'd say closer to 2". An 8" tier is supposed to serve 12. The 10" tier is supposed to serve 18-20, so that should give you an idea.

Remember that fondant cakes usually run higher than buttercream. If you are doing a lot of detailed work, take that into consideration.
