Cake Decorating Community - Cakes We Bake

I am making a 12x18 double layered sheet cake to take to my brother-in-law's surprise birthday party this weekend. The problem is that the party is 11 hours away. I have a box large enough to hold it and a piece of foam for the bottom of the box to protect it from the bumps of the road. I'm wondering if I should put ice packs beneath the cake to keep it cool or if it would be better to just leave it as is. I'm going to decorate it with buttercream on Thursday so it will have all day Friday to set in the refrigerator. My concern with the ice packs is possible condensation forming inside the box. Any suggestions?

Noooooooooooo Linda - how does that happen!  What a nightmare for you.  Fingers and toes are crossed for you............

The air started working again, but not as well as it should. After 12 hours of travel, with great trepidation, I opened the box to find the frosting covered with tiny cracks. The sides were a bit saggy too, but the edging helps over that.
This morning, I added the gold details, lettering, and edging. I felt like I was trying to make a silk purse out of a sow's ear, but I'm told it looks just fine. Hope it tastes okay. Hopefully the glare of 50 candles will mask any imperfections. I'll NEVER do this again though!
The writing and a little of the colors on the smaller cake ran a bit, but I'll just tell Birthday Boy that any bluriness is due to his failing eyesight.
I posted pictures. I think they are on my page. (?) Now if we can just get the cakes to the party okay...

Ah - those were the cakes?  Well you certainly can't see any cracked frosting Linda (not in the pics anyway).  OK, so your writing ran a bit.  It's still very readable.  The book cake I think looks particularly good.  Considering the nightmare you've had with everything, I think it all turned out pretty well.  Such a shame you felt the way you did.

All went well at the party. There were perhaps only 8 pieces of cake left, which matched the guest estimate pretty well. It was nice and moist, and the frosting tasted fine. Guess I'm too much of a perfectionist for my own sanity, but its still not an experience I want to repeat. Thanks again for all the encouraging words and advice, everyone. Now for a good night's sleep with no worries.

Good news Linda - I always say the proof is in the eating!  You are only one in a long line of us that are never happy with our work.  We always think we could do better.  Sleep tight!

Just checking in to see how things went.  My brother in law is dying of cancer and have been spending extra time with them. 

Sounds like you had a few eeks but over all turned out good!  I will check your pics!  At least it was not a wedding cake!!!

I'm so sorry to hear that, Jeri. I just lost a good friend to cancer this past week. Things turned out okay, and no one knew how on edge I was about it. It tasted good, so that was the most important thing. My prayers for your family.

I checked out your pictures!  They are great!  And as long as it tasted good... no one usually notices the flaws that we see ourselves!  But they always remember if it tasted good!

Thank You for the prayers.  Tough time.  They live only a few blocks away from us so we can get over to see them often.  Wish I could do more!
