I need to do a large cake 11 x 15 x 3 does anyone have a scratch recipe for a Vanilla Sponge for this size, tried doubling the mixture but it does not seem to work out, any help greatly appreciated, would need the recipe in UK measurements if possible.  Many thanks Tina

Hi Tina - me again!  When you say this didn't work out by doubling, what went wrong and what recipe are you using?  I have been thinking about this one and trying to find an answer for you.  I have a recipe for a traybake 11.5" x 14.5" from Mary Berry's book, but I don't think it comes out as tall as a 3" (it's done in a roasting pan so I think it came out about 2", but it's a long time since I did it).  This is it, how does it compare with what you did?

350g soft margarine, 350g caster sugar, 450g self-raising flour, 3 tsp baking powder, 6 medium eggs, 6 tablespoons milk.

Put all the ingredients into a mixing bowl and beat well for about 2 minutes until well blended.  Bake at 180C/350F/Mark 4 for about 40-45 mins.  Leave to cool in the tin.

Hi Tina! Pls. try this recipe for cupcakes in making your 11x15x3 cake. This is what I do.

Vanilla sponge Cake or cupcakes (makes 36 cupcakes)
      • 600 g white sugar

      • 340 g butter

      • 6 eggs

      • 30 ml vanilla extract

      • 560 g all-purpose flour

      • 25 g baking powder

      • 355 ml milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 11x15 inch pan or line a muffin pan with paper liners.
  2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour  batter into the prepared pan.
  3. Bake for  40 or more minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.


I would never do a sponge in such a large slab. Does it fit into your oven?

I would do two that abutt each other to make the size required

This is what I have - 

# 10 x 16 rectangle
32 oz butter 
40 oz Caster sugar
32 oz Eggs
32 oz mcdougalls Sponge flour
9 tb water

120-140oC cooked low and slow ...
