HELP! Frosting falling off
I'd appreciate input...I recently tried the swirled rose technique using the 2d tip. (The popular shabby chic looking frosting technique). Fortunately I just made a small practice cake. Unfortunately though, I woke up this morning and all of the roses had slid off the side of the cake. I used traditional buttercream. Was my frosting too thick? What did I do wrong. Was planning to make this same look for Thanksgiving. Need to get it right. Please advise. Thanks!

This has only happened to me once. It was a vegan icing. Icing was heavy and made without butter/shortening. That I think was the problem. Icing wasn't stable. By "traditional" bc what do you mean? That is different for every decorator. Did you add meringue powder to help bc crust? Your consistency has to be right, not heavy, medium & fluffy. When spatula with icing on it is lifted out of the bowl, icing doesn't fall off the spatula. I often practice piping on a over turned bowl.. saves baking cake after cake for practice.

It also helps to crumb coat with a thin layer of BC before doing the swirls.

Thank you for the input. I did crumb coat. My frosting is Crisco, powdered sugar, merengue, and liquid. I guess maybe it was too thick??

My advice, practice on a overturned bowl with your original icing. Then add a bit more liquid, mix & try again. Trial and error...once you get the right consistency...you will know it. Your icing will still be there, well piped on your bowl the next morning.....

I agree about the consistency of the icing being an issue. I also wonder if perhaps your crumb coat had crusted over too much? If it was really dry, that could have stopped the piping from sticking to it. Did you make sure that you piped right up to the crumb coat so your piping was touching everywhere? If you had some air pockets and one doesn't stick then it will tend to drag others off with it.

The other issue I didn't consider is the weather/temperature where you live. I usually check that with members. I see your from Texas, so I don't know if it is/has been hot & humid in your area. But I just checked temperature where you are...and it's definitely NOT humid. So that isn't the problem......
