Cake Decorating Community - Cakes We Bake

Hello! I am having a hard time trying to fondant large cakes! My smaller cakes are just fine, but for some reason I cant get my 16" cake to work. My big 20" Wilton fondant roller is not big enough, it tears when I try to lift it on cake, uneven thickness in fondant.....Any suggestions would be appreciated. I have my first fondant wedding cake due at the end of the month! Oh I miss the days of buttercream.....!

Try to use a roller with 'thickness spacers' (the colored plastic rings) to avoid uneven thickness. When lifting the fondant dont lift it on your roller like you would with smaller cakes but put your two arms underneath the fondant to minimize stretching, elephant skin and tears.

I would totally recommend purchasing "THE MAT" from Sweetwise.

Thank you Dorit and Meera! They are both wonderful suggestions!

If you have a Walmart near you, you can buy different grades of food grade plastic on a roll. I bought the "MAT", and I love it, but it was expensive. Especially having it shipped to Canada.  When my MAT wears out, going to buy the plastic @ Walmart. I can roll out the length I need to purchase.  It is WAY cheaper.  The other thing about the MAT is it is VERY large. I have a new kitchen with a large counter/eatting area, and If I didn't have that, the MAT would not fit on a traditional kitchen counter. If you watch the Sweetwise video, she is using the MAT on a huge industrial type professional table. Now tell me, who has a table that size, & most importantly that height in their house??

Just my 2 cents Billie

June dont know if you have heard but they have introduced the new PRO MAT and HOME MAT.  Finally has the measurements on the mat! Also the HOME MAT is smaller :)

Yes Meera

I am on Sweetwise email list ever since I bought THE MAT from them.  I certainly would have prefered the HOME MAT, would have made more sense. The food grade vinyl @ Walmart has no chemical smell or petroleum smell. It is thick, heavy duty & looks durable. I have been thinking about buy a 1/2 metre just to use for covering my gumpaste cut outs so they don't dry out.

I should have said food grade VINYL, not plastic.  Sorry

Another way to try is knead a little tylose or gum powder into your fondant and when happy with rolling out , roll it up onto your rolling pin then un roll over your cake , then with cake smoothers ease out any bumps as you would normally .

I tried the tylose  and it worked great, thank you Martin!

I Love Sweetwise! The Matt is definitely next on my list of big purchases - It looks incredible!

I know, her table is huge! I definitely don't have room for something that big, but I will try the smaller Matt next "cake" around!

hi Billie personally i use "the mat" as well definatelylknow what you mean when icing big cakes!!! but very expensive here in the UK as it has to be imported but another alternative and much less expensive is to slide the icing onto a very large cake drum position over the cake and then simply tip and slide it off - works a treat.
