Cake Decorating Community - Cakes We Bake

i'm quite new to cup cakes and have found they are great on the day i bake them but they  go dry quick, does anyone know what is the best way to make or keep them moist,i have 50 to do for a wedding but they have to be done the day before ,i'm worring that they won't go dry anyone got any suggestions

Do you leave them uncovered?  That may be a reason....i usually put mine in a box or container and take them out when i need to ice them.
Make sure you are getting a good seal between the icing and the paper cup.   No exposed cake.  If your cup cakes have "muffin tops"  they will dry out- make sure your cup cake doesn't come up past the top of the paper cup.
As soon as mine are cool I put them in plastic "clamshell" cupcake containers.  They stay nice and moist for days, even if the frosting doesn't go completely to the edge. ;)  I even leave them in there to ice them if I'm just doing swirls and decos.
great suggestions thankyou  ,no i did'nt cover them, but i will now ,and i probably filled them to much ,is it worth putting a brush of the boiled sugar and water on to them or is that a bad idea ,i just don't want them to be dry inside ??
ok ,i will just cover them or freeze them, and hopefully this will do the trick thankyou

Hi Mary, which recipe are you using? The best recipes for cc's are from the hummingbird bakery book "Cake Days," you really can't go wrong. they are really moist and keep for at least 4 days. If you want to try some of the recipe's out before you buy the book go to me fb page and under my discussions you'll find 2 humminbird recipes for cc's.

I add instant pudding, flavor of choice and my cupcakes always stay moist.  Add the dry pudding to the dry cake mix and mix in then add the wet.  Always works for me.  When I do wedding almond flavor, I add white chocolate pudding to the white cake mix with almond emulsion.  Hope it helps!

Over cooking is the #1 reason for dry cupcakes.

ditto...i always take mine out before time b/c u will have that "over-baking".
