I recently did a batch of cupcakes, and even though they taste delicious, I had to remove the top and it was a bit crusty on top.  Is this just because i have them in oven too long?

Hi Lynette.  I would suggest the most likely reason is the oven temperature is too high, or the cakes are too close to the top of the oven.  Did you do everything the same as usual?

well i had the oven at gas mark 5 or 6 and thats the lowest and i had it in oven, although i did use cane sugar as that was all i had in house, just doing sample cupcakes for a customer....it hasnt happened before so just wondered

Cane sugar instead of caster?  That could well be the issue as it is more 'gritty' and won't melt into the mixture as easily.

your probably right, just giving customer a few free samples before i cater for her daughters holy communion as she is quite fussy, tasted the cakes myself and taste lovely, alot of ppl always comment howl light my cupcakes are!

well yes but sometimes its difficult cutting off top, so will just get my caster sugar for next time! this customer is quite fussy she though my vicky sponge was too moist! so making sure she gets what she s paid for.

Well weird!  How can a vicky sponge be too moist?????????  But yes, I always make sure I have the basics in my cupboard, whether I'm expecting to make or not.  It's a bit like being an addict I think - can't bear not to have the stuff there, just in case I need it lol!

A trick lynette, if you are using cane sugar,  warm up the liquid you are using & add to that. Sugar will disolve... crunchy problem solved.  :o)
