Lemon Cream Filling

Ingredients

  • 1- 8oz pkg cream cheese softened
    1 1/2 c whipping cream
    1 pkg instant Lemon Pudding mix
    1 tsp lemon extract
  • 1/2 cup granulated sugar
     

Instructions

1: In a large mixer bowl cream sugar and softened cream cheese.
2: Add pudding mix and extract; mixing just till combined.
3; Slowly add in the whipping cream; mixing till throughly combined and fluffy.
You can change up this recipe by changing the pudding flavor and extract.  I love to use chocolate pudding mix with vanilla extract..

It does sound delicious. I am a lemon lover!
Sorry I went back and edited the recipe. It calls for 1/2 cup of granulated sugar... Sometimes I leave the sugar out because I think it makes the filling too sweet.

Yummy! I have a request for a cake with lemon filling. I think I will try this out. Thank you for sharing!
Lemon Curd also makes a great filling... I use Paula Deens recipe from Food Network. It is soooo good too!

Sounds yummy -- When you say slowly add in the shipping cream, mixing till thoroughly combined and fluffy --are you using a wisk or paddle attachment on your mixer --and are you then using a high speed as if you were jut making whip cream?
Oh forgot -- can either of these recipes be used as a topping also ( lets say for a 9x13 pan cake)?  Or is it only good for a filling?
I use the whisk attachment on high.  This filling is rather thick so I guess you could use it as a topping.

Do you whip the whipping cream or leave it a liquid?
