Cake Decorating Community - Cakes We Bake

Has anybody ever heard of this??  I had a customer come in and ask if I do any cakes with cream cheese fondant and I said I would "check and see what I had"   because to be honest I didn't know what the heck she was talking about!  Is there such a thing??  Can anybody share a recipe or share what they thought of it?  Feeling a little embarrassed not ever knowing about this before :(   Thanks!

Well, I had never heard of it either, so I googled it and found a few recipes. I do not know if the one I am posting is any good or not, but here is 'one' of several. Also, for myself, I make mmf and then add Lorann cheese cake flavor to it, and that tastes very good. Here is the one I copy/pasted.

Cream Cheese Fondant
8 oz. mini marshmallows
1 Tbsp. water
1 oz. cream cheese
1/4 tsp. vanilla extract
3 cups (approx.) powdered sugar
Crisco

Place marshmallows, vanilla, and cream cheese in a microwave safe bowl and add the water. Microwave in 20 seconds increments until they “puff up.” Go slowly. Stir in with a spoon until it’s all “soupy.” Slowly add the powdered sugar. Knead it with the spoon until it’s all mixed well and no longer sticky. Then knead it on a lightly greased (with Crisco) surface until smooth.

*Note: The cream cheese seems to make this recipe a bit more sticky, thus the need for additional powdered sugar.

Store extra fondant in an airtight container in the refrigerator. Bring to room temperature, microwaving a few seconds at a time as needed, before use.

Well you don't have to be embarassed about the "not knowing". There is always some new type of icing, or technique. I can imagine the first time a decorator was asked to use fondant, when there was only ever buttercream & marzipan. He/She must have been perplexed!!

Me personally, I would use cream cheese "flavoring". But guess it would be fun to make a batch and see how it tastes and how it holds up.
