This is a recipe I call my Ohana Flake Cake. Its very tropical, great for summer :)
Ingredients:
1 white cake mix (or a bakery base mix)
3 eggs
1/4 cup vegetable oil
1 cup cream of coconut (usually found in the oriental or thai food section of any supermarket)
8 oz sour cream
1 tsp. coconut extract (you can be a little more generous if you love that coconut flavor)
12 oz Flaked coconut (or whatever amount of flakes suits you)
Directions: Combine the ingredients and m ix very well. Pour into a greased pan. If using a mini-bundt cake pan or silicone mold, bake at 325 degrees F for about 20-25 minutes. Keep an eye on it because different pans cook differently. You don’t want to overcook it. Once the center is set (doesn’t jiggle when you move it) and loses that glistening look on top, take it out. If using a a round or square pan, cook at 350 degrees F for 3o-35 minutes or until set. Once cool and removed from pan, top it with coconut flakes and tropical fruit salsa.

Not only does this recipe sound good, it is extremely pretty! I will be giving it a try that is for sure. It would go great with my Mahi Mahi BBQ topped with my Manjo/Peach Salsa. I think I will make it extra large cupcake holders.

Oh my goodness! This was WONDERFUL, I'm Yelling it out loud and so is my Husband ~ WONDERFUL!!!!!!!!!!!
I could not find cream of coconut so I used coconut milk and I thought I had a white cake but didn't so I used a yellow mix instead. My fruit salsa, I didn't place any sugar to it and I made extra large individual cupcakes.
The only other change I did was I presented my version of your delectable dessert differently and you will see in my picture.
