I just made two fruit cakes and have some left over fruit mix batter, can I freeze it??

I don't know for sure Lynette as I have never done it, but my gut instinct tells me it's probably not a good idea. Why don't you bake it, then freeze?
I baked it but might just keep for a cake sale, its ok to just wrap it in cling film and then put in a sealed container? also wanted to ask I have been asked to make 24 cupcakes for Christmas with 6 different flavours, should I be charging xtra for the different flavours?
As it's fruit cake, what I usually do to keep is wrap it in greaseproof paper, then wrap again in foil. Put it in a tin or whatever, it will be fine.
As for the different flavours of cupcakes, that's only 4 of each flavour, so you will be making more than you need. People need to understand that you are not a supermarket that has hundreds of these things on demand, so if you can't get a buyer for the ones this customer doesn't want, then I guess you could charge a bit more.
I would suggest you advise people that you have a minimum number required for each order at your usual price.
well what i do is freeze the batter and it can be used again, but i would charge £36 for 24 so i just charged 40 but customer found that too dear so has asked for less buns, these ppl dont realise whats involved in all the ingredients, i explained i could only do two flavours for a batch of 10, but i should have said the most i can do in a batch are 3 flavours.
well she's a bit tight isn't she! Only another £4 for all those extra flavours............ Agreed about the number of flavours you would offer for that number. No, they have no idea what's involved!
