I really would like to make a cake for my daughters christening - a 2 tier but I'm not sure how I go about putting the second cake on top and how I would ice it then. Also, what is the best icing to use for a Christening cake? I am just putting some ideas together at the moment. Would appreciate any advice.

If I had an elaborate design in mind, I would defenitely opt for a high density cake such as fruit, date, nut or chocolate alternately a butter cream cake and ice it with fondant. Instead, if moistness and taste was a priority, i would opt for a fresh cream cake and ice it with whipped cream. hence the icing is entirely based on what you want. If you are good with using rolled fondant, then you could try icing a fresh cream cake and decorate it with butterflies and tiny flowers (not very time consuming). While using whipped cream, I always prepare the cake the previous night and let it set in the refrigerator and ice it with fondant atleast 4 hours before the event. It is important that you keep all decoration (flowers etc) ready, so you don't lose time.

Hi Stephanie - there are many discussion topics in the forums on stacking cakes - give it a quick search and you should be able to fnd just about anything you need to know. There are also lots of video tutorials here and on the web in general that will show you how to stack cakes.
