A friend of mine has asked me to make her a topsy turvey birthday cake, the only problem is that she would like it to be a chocolate biscuit cake rather than a sponge cake, has anyone done this before? I haven't tried carving the buscuit cakes yet so I'm nto sure how well they will hold up,although they are far more solid than a sponge or maderia and also I don't know if the buttercream will suit the cake?? maybe I could make a chocolate buttercream, any/all suggestions/advice welcome

Forgive me for being American....but I have to ask...what is a biscuit cake? I've never heard of it.
Chocolate biscuit cake is kinda like rocky road without the marshmallow, I use milk and dark chocolate, digestive and rich tea biscuits which is like graham crackers (not sure what the equvelent of rich tea is) and golden syrup which is the same as your corn syrup, it's a really popular cake here and most wedding cakes are now made from this rather than the traditional fruit cake. It's a fairly sturdy cake so there is no problem with stacking the teirs I'm just not sure how well it can be carved to get the topsy turvey effect!
Elizabeth, do you bake it? Could you go into more detail? You have my curiosity peeked! How about a recipe?

nope, it's the easiest cake ever, my sponge baking skills arent great so this is perfect for me! you just melt the chocolate, add the syrup, add the broken up biscuits and thats it, stick it in the fridge and away you go, there are lots of variations, I use Mars planets in it too (not sure if you have these or maltesers) toblerone in another one that you can add to it or honeycomb for extra crunch. There are loads of recipies for it online, I use the one on www.odlums.ie but I left out the fruit and nuts coz it's usually kids cakes that I make :-)

If I am reading the ingredients correctly, I think that the golden syrup may be our molasses?

yes you're right it is molasses, some other sites said corn syrup is the same as our golden syrup but golden syrup does have a bit of a taste
Let me know how you get on and make sure to press it down hard or you end up with air gaps!
