Hi bakers,

I have offered my chocolate-cherry cupcake for valentines day and have received orders for it. i usually use store-bought cherry pie filling to fill these cupcakes,

the factory that supplies this filling is out of stock and wont get for awhile due to it being an imported product (i live in the caribbean)

i therefore need a tried and true recipe to make cherry filling but it has to be MARASCHINO cherries as that all i have available.

All your help is appreciated.

I have cherry pie filling a bill-zillion times. Well perhaps I am exaggerate a little..lol

Anyway, normally I would use sour cherries, but since all you have access to is maraschino it should be pretty easy.  Usually it is 3-4 cups cherries, 1/2 cup water, 1-2 Tbslp cornstarch to thicken.

Measure out out your cherries, place into pot. I personally wouldn't add anymore sugar cause these cherries are pretty sweet. Add 1/2 cup of liquid from the jar and place into pot. Take a Tblsp or so of remaining juice from jar, place in small bowl & whisk your cornstarch into it. Make sure there are no lumps. Add this to the pot BEFORE you turn on the heat. Stir thourghly until cornstarch mixture is incorporated. Turn heat on medium, and stir constantly until thickend. That's it. When it has cooled slightly, taste and see if you feel it is sweet enough. You can always add more sugar, but you can't remove it.

By the way, I do add just a touch of almond extract to my cherry filling. But that is just a matter of taste.
