Can anyone tell me why my cheesecakes are cracking?  They have been doing this lately.  I have tried waterbaths, cookingit slow, and they still seem to crack when they settle.

Could be that you are incorporating too much air when you're mixing it, that used to happen to me all the time. Mix eggs in on a slow speed till blended and then mix milk or other liquids in gently with a spatlula. Worked for me - good luck!

Thanks. I will try it.  I never use milk, but sour cream, and I will also use another advice of cooking it at a slow temperature.

When I bake mine Jean. I let the cheesecake sit in the oven with the heat TURNED OFF for a hour, hour & a half.  Door closed until oven is stone cold. I also fold in my ingredients very slowly. Usually tho it is the change of temperature from oven to outside that causes the cracking. 

This works for me.

All the previous posts have given you very good advice.  A couple of other things you may want to to try:  make sure all ingredients are at room temperature which makes it easier to mix without over beating &  grease the cheesecake pan (avoids cake sticking to the sides and then pulling away when the temperature drops causing it to split)--This is what I do & then keep them in the oven until completely cooled and rarely do I get a crack.

I forgot to mention greasing the pan. I do that to, I use my homemade cake release. Like you said, the cheeesecake sticks to the pan so cracks when pulling away upon cooling.   Guess we 2 have done our share of baking....eh???

I found that when I started doing all that the cheesecakes come out picture perfect (or almost) every time.  And yes I have made many many cheesecakes.  Seems like everyone in the family loves them.  I must have hundreds of different recipes because I don't like making the same thing all the time.

Yup....me too. Except with my son never home, hubby & I watching our weight...I don't get to make these kind of things anymore. No one to eat them....no one to give them away to!!!!   :0(
