I need clarification please. I changed the designed of a birthday cake, instead of 2 tiers, it’s just one cake. I have to carry it to my job and store it in the refrigerator until the person collects it that day.
So, could the cake be stored in the refrigerator?

I refrigerate (in a box) my fondant cakes all the time. I use MMF and have never really had an issue with it. It does get some condensation when coming to room temperature. I simply leave it alone and it dries. Not sure if store bought fondant is the same since I don't normally use.

I think you should be OK. I have done it with store bought and yes, it does sweat a little initially, but soon dries out when exposed to the air. The only thing I will say is, if you have fondant decorations, beware of them going soft or colours bleeding. If it's in a box, why refrigerate at all? Better just to leave it somewhere not too hot if that's possible.

I don't refrigerate my fondant covered cake. It becomes so shiny and soft when I do it. I juts see to it that it will be finished a few hours before delivery.
