Throwing out a a question here. My nephew us getting married next May. It is un a rural setting. Chapel & reception all in one place. They are having a gourmet bb-q caterer. They do not provide wedding cake. They have asked me to make a small wedding cake to cut as they want to ( bride does ), make cupcakes. 190 to be invited. They asked my opinion, re: the cupcakes. Problem is there is no refrigeration at this venue. I said it would be extremely risky. Once they leave the city for the wedding/reception, they would ( or someone) have to bring the cupcakes with them. No storage, no fridge??? It could be a cool May, or stinking hot, can't predict the weather. My only suggestion to them would be, keep the cupcakes frozen, iced, transport in coolers with ice. If they were set up right after the ceremony, they would thaw and be fresh. I did tell the bride that even under the best circumstances, cupcakes are hard to transport. Did 200 for a friends wedding, man, what a nightmare. Since I am a hobby baker, didn't have a van/truck. It was August, icing was melting!! Agggg!! Thank goodness the hall had a walk-in fridge!. I fixed the cupcakes, set up the table and staff put them out just before B & G/guests came.
Hope this bride re- considers. Feeling she might. Just baking 200 in your own kitchen & finding enough room to freeze them, let me tell you, it ain't easy.
Thoughts on this???

Have you considered fondant cupcakes?  I think the fondant would hold up better in the heat, and as long as there is no cream cheese in the frosting underneath the fondant, spoiling shouldn't be a huge problem.
I did mention fondant, bride us not crazy about it . But even if she does use it, transportation would still be a nightmare.
They have cupcake boxes that hold a dozen or so cupcakes securely... but you're right.  That's a bunch of boxes!
I have to say, the logistics if this location is really not conducive for cupcakes. The bride is young, very artsy. If this was for 50 people, no prob, but 190???? Just don't see it. Totally impractical.
Agreed.  I personally don't like cupcakes for a wedding anyway.
Actually, I don't either. A shower, birthday, or small celebration, yes. They are a LOT of work. I have done it twice, never again. Being a hobby baker with no delivery Van, transportation is a big issue. And can be expensive if you buy cupcake boxes & such too.

You can even get a box for 2 dozen I've seen.

I'd just bring the cup cakes baked and uniced and my toppings ready to go in hygo bags, then I'd top the cup-cakes right on the spot as I put them out, then I'd just throw the bags away.  Save the tips if you want but at 50 cents per I'd prolly just chuck them too...

Great idea JJ, but were talking 190, count em 190 cupcakes.  This is in a rural area, a conservation park.

Once we leave home ( in the city ) for wedding/reception, no going home.  SOooooo depending on the time of ceremony, someone from the family or guest will have to be responsible for transport, storage, set up.  Big job, especially if you have no cake decorating experience.

I did wedding cupcakes and cookies for my best friend's daughter's wedding this past May...230 assorted cupcakes, 216 monogrammed  cookies and one small cake for the bride and groom to cut, to be exact. I baked all the cupcakes and cake two days before the wedding and iced them the day before the wedding.  I did not have to freeze them.  The cookies were made ahead and frozen.  The icing recipe I use on the cupcakes and cake  does not have to be refrigerated.  Transportation was not difficult.  I purchase the containers in this photo at Target... http://www.flickr.com/photos/ktk_2010/5719002408/in/photostream  Each tub held 35 cupcakes...would have held more but the cupcakes had paper cupcake wrappers so I couldn't pack them in too tightly.  I'm doing cupcakes again for my daughter's wedding on July 19.  I love doing cupcakes.  Here are all the cupcakes and the cake set up... http://www.flickr.com/photos/ktk_2010/5721858871/in/photostream/

Well, will ck out the containers.  The bride would have to purchase those, and they are on a very tight budget.  Plus we would have to drive over to Niagara Falls, USA, to the Target their.  But I do appreciate all the  good suggestions.  This is info bride needs to know.

I have done wedding cupcakes twice.....lots of work.  But I was also workinf full time then.  Now that I am retired, I wouldn't be so stressed, different story.

I would like your icing recipe very much tho.

Oh, just saw the containers.. Kathy.  Can buy something much similar, but longer, wider, holding more.  Bought a container for under my bed, and that would probably do the trick.  Got them here at a Canadian Tire store.

Actually, if your no refrigerate icing was used, + these very large containers, you know.......it just might work!!!

Checked out Cake Bible book I have, + Rose Levy's website for a non refridgerated icing....so again, would appreciate yours.
