i'm seeing on cupcake wars the contestants are piping things on wax papers freeze them n then the are used as decorations. meaning they can stand in the buttercream, like a nice topper. 

what im wondering is what are they using is it buttecream, melted chocolate, what?

Kim - it's most likely melted chocolate.  You can do frozen buttercream transfers (there's a video on here for that), but I think as those come back up to room temp they will fall over or just plain melt, which is why they are mostly used on flat surfaces.  You can also do colorflow which hardens almost like a hard candy, but I'm not sure how long they take to set up, or you can use piped royal icing which will harden and stay hard, and you don't have to refrigerate them.  I hope that helps!!

Wouldn't candy melts also work for this?  I don't think buttercream would work, not stiff enough to stand on its own.

I agree it would have to be something that would hold up and I don't think buttercream will do this, but chocolate/candy melts should.
