Cake Decorating Community - Cakes We Bake

I was wondering how to store cakes.  Do you have to store a cake filled with the following fillings covered in fondant in the fridge:

 

ganache

mousse

cream

 

It is my understanding they must be in the fridge.  My concern is the fondant and gumpaste figures on the decorated cake and the damage that may be caused to them.

Linda, yes you need to refrigerate a cake made with any of the above..they all have dairy ingredients. As for the fondant...contrary to popular belief you CAN refrigerate fondant..here is how I do it...I cover the cake with the fondant and store it in a place in my fridge furthest from the freezer because for me this is the "warmest, dryest" part of the refrigerator. Take the cake out a few hours before delivery/eating and let it come to room temp, you can place a small fan on the cake to help dry any condensation that may develop (make sure you keep those fan blades clean). I wouldn't put the gumpaste on until the cake has come to room temp. Anyway works for me!!!
