Hi Tina , the fish are quit easy really !
The best trick to know when making any 3D cake is to mix a little gum trag or tylose powder or cmc which ever you use , to your fondant this justs let you cover your cake without too much sagging !!
I baked a 10 inch round sponge , I use a Madeira mix which is best for cutting , shaping and stacking , then give it a rough covering , usually doing the tail and head ends first . It doesn't have to be in one piece..
Then you start to add the detail , the face gills , scales etc
The cut out of the sponge when making the fish shape I used to make the water look rough , it also supports the fish itself !

Just not enough hours in the day !!
Hope you well , have been madly busy at work , caking and trying to get the garden in some sort of order plus keeping an eye on my dad after my mum died last year but he's doin really well.
It is too easy to lose to many hours chatting on cwb too !!
