Any idea why my cakes never bake evenly? They always come out having a mound in the center.

I use most of the ideas above.
I had that problem also until I started using the baking strips.
I now bake at 325 and leave iin the oven a little bit longer .
When I have not used the baking strips ( and sometimes even with them), I use the technique Milissa talked about--either use a clean kitchen towel of a few paper towels and as soon as you tek the cake out of the oven, cover the top with the towel and gently press down all over the top of the cake. This presses the hot air out of the cake which helped cause that bump and which also contributes to dryness.
I would only use the Flower nail or a heating core on cakes 10 inch and larger
