If a receipe for chocolate chip cookies calls for pastry flour, can cake flour be substituted?  I've really never heard of pastry flour before...

There is a difference.  Pastry flour is high starch low protein.  It falls somewhere between cake flour and all purpose flour.  From what I have read if you don't have pastry flour, you can substitute 1/2 cake flour & 1/2 all purpose.

I must say, I have never heard of pastry flour in a chocolate chip cookies????   I have always used all purpose flour when making my cookies.  I use pastry flour when I make... well pastry.  

I thought it was just me June.  I had never seen a recipe for chocolate chip cookies with pastry flour.

Nope.... thought it rather strange????
