Cake Decorating Community - Cakes We Bake

HI, I have a customer who wants a cake with a vanilla cream filling with fresh berries. She says the cake flavor & berries dont matter, she would leave that up to me. I'm thinken gee thanks ;) lol. I know everyones tastes are different. Anyhow, I've looked online & found  some vanilla cream recipes, they all seem like the type that you have to squeeze into the cake, does anyone know if these types can be used like regular icing between the layers, or have a good recipe that I could use. I was thinking of using strawberries, since they are eaiser to slice & spread out in the middle. Just not sure what cake flavor would go good with strawberries. Myself I think chocoolate goes good with any & everything. lol. Thanks for any help I can get

I'd go Vanilla cake or Sponge cake as well. I agree with Denise on the chocolate being heavy on the palate. Vanilla and Strawberries is a great combination. Vanilla goes well with most all berries too. If you are hard set on chocolate though, you can make a black forest cake.
I got this strawberry cake recipe from allrecipes.com. I did a vanilla cream cheese filling and it was to die for. It held up great under the decorations too. Instead of using 1c milk I did 1/2c milk & 1/2c strawberry daiquiri mix. The cake was for my fire department. They loved it which surprised me because my crew is very picky about what they eat. Hope it helps
