hi everyone

it's winter in south africa at the moment and the past few days have been very cold (not 1 degree temps all day but it's been thereabout)

I started melting my butter in the microwave to speed up the softening process..this resulted in a dry texture in my cake and cupcakes. What is the best way to soften the butter without zapping it in the microwave?

PS: I think the melting of the butter resulted in the dry texture..im not sure? the same recipe in summer produces a wonderful soft texture

help is appreciated :)))

Soft Butter holds it shape and can be squashed - but there should not be any oil visible.

Chunk it

Cut into small pieces and lay out on a plate .. or a metal tray.. Or cube it into very small pieces.

Thump it

Put the butter in a plastic bag and squeeze out the air. Hit ot with a meat mallet or rolling pin. [Clip/tie the bag ... optional ...make sure there is not air to mak it pop]

Zap it [Micro wattage varies [~1000w]

Place the whole* wrapped butter on a micro plate/rack. [*Different countries different sizes].

Numerous variations on what comes next:

- each face of the block is going to be zapped by rotating the butter to the next face after zapping each on High power for 5 seconds.

- 10 percent power for 1 minute

- defrost setting for 15-20 seconds

Grate it

If you freeze butter, grate the frozen butter toget it to room temperature

Mollycoddle it

- wrapped butter in a glass or metal bowl over previously boiled water

- wrapped butter in a glass or metal bowl sitting in warm/hot water  

 

Watch that the butter does not melt instead of soften.

 

If the butter is hard, I do the zip loc bag trick as in the other post. Cut in pieces, put into bag, & go over with a rolling pin. Works every time. :0)
