<p>Either grenadine or syrup would work. Here in Cayman we call is syrup - in the US, it is called grenadine. Its the same syrup you use to make drinks - hope that helps!</p>

Either vanilla or lime buttercream. Maybe even a cream cheese icing. I would top it with some graham cracker crumbs too to give it a real key lime pie feel :).<br />

Hey Kim, I think if you use 2 small- medium eggs, it will probably work out ok. I usually get between 20-24 cupcakes with this recipe, so its not a huge batter.
