I don't usually ganache any of my cakes, unless asked, but i'm now thinking of doing so for everything. I've never ganached buttercakes. Is it nice and does ganache complement it?  Also with banana flavoured buttercake (or banana cake)???

I LOVE ganache... can eat it by the spoonful! On a buttercake the dark chocolate ganache would be oh so yummy. On a banana cake... not sure unless you like chocolate and banana. The white chocolate might be ok on banana but I would think a nice cream cheese buttercream would be much better there!
So do i and yes, i can just eat it by the spoonful as well! To be honest i've never tried cream cheese buttercream. Any nice recipe u can recommend? I try to stay away from white ganache too bcoz i had a disaster when I made my friend's wedding cake. The tier slipped off and had to go back home to redo it again! So ive never used white ganache after that lol!

Ganache can be whipped like buttercream after it has cooled completely. I use 1 lb of good quality dark chocolate to 16 fl oz of heavy cream. Add flavorings after you incorprate the cream. Cool completely and then whip with the whip attachment until light and fluffy...it is delicious. Also you may have used white bark for the white chocolate and it slid because it has oil instead of cocoa butter. Make sure you use pure white chocolate next time and a little less cream. White chocolate has no cocoa liquor..it is cocoa butter and milk solids so it has a higher percentage of fat.
Oh by the way..ganache is a noun not a verb :P :P :P
