I have a friend that requested a graduation cake and would like whipped frosting.  She then thought that it may not hold up in the warm May weather so said that buttercream would be fine.  Does anyone know of a whipped frosting recipe that will hold up in the warm weather? If I can give her what she wants, and at the same time learn something new, it would be great.  What are your thoughts about a meringue icing? Thanks in advance for responding:)

Here's a recipe for whipped cream frosting that I've tried a while ago and it turned out great:

I tub frozen whip cream
6oz cream cheese
11/2 tsp vanilla or almond extract
1/3 Cup of sugar

It's not something I normally use so I don't know how long it (or any other kind of whipped cream frosting) will hold up in the heat, I think when you're dealing with cream there's always that concern that it may go bad in the heat also... If you're experimenting you can always test it out and see what works! I've also seen recipes that are just cream, sugar and vanilla and some that use marshmellow fluff so if you wanted to try a few you can probably "google" some recipes. Sometimes I throw in a bit of meringue powder into my buttercream so if heat's a concern I'd go with a high ratio shortening in your buttercream (no butter) and that will probably be your safest bet.

Charlotte's Whipped Buttercream is a great icing. It's an all-shortening recipe but you can use hi-ratio shortening for added stability, and you can use half (or even all) butter for flavor. If you think the weather is going to be super-warm you may want to limit how much butter you replace the shortening with. http://www.angelfire.com/on2/cakes/Buttercream.html

I used this icing (half butter, half hi-ratio) under my most recent (diaper bag) cake and it held up great in the spring weather, even under fondant. It is less sweet than a traditional American buttercream and tastes light and yummy. Normally I use Italian meringue BC icing but I use Charlotte's recipe when someone wants a powdered-sugar based icing.
