Butter cream icing melting? just falling off of cake

When I make my butter cream icing it looks so good at first and even crust but if I go back and add a trim etc it melts off just runs off the cake. I am using Edna's recipe and real shortening with trans fat.

Thanks

Sharon Z lives in the humid South I believe!

Yes, Sharon Z lives in an even more humid area than Texas.  Her frosting is wonderful, I followed her instructions to the T and it's perfection every time.

My friend was using shortening, but not vegetable shortening (she's not much of a baker and just didn't know).  I had to explain to her that Margarine is not butter and Parkay is not Butter no matter what the commercials said when we were kids.  She uses vegetable shortening now and is having much better luck.

Here is a link to a youtube video of Sharon making her frosing:  http://www.youtube.com/watch?v=zB4ibkH0V_4&feature=related

If you can't find Vegetable shortening with the trans fat (usually the no name brand, like you said) I have found that you can use Crisco and there's not a lot of difference because you are adding the fat back in when you add the creamer/water mixture.  The only real difference I have found is that the lack of fat sometimes will make the frosting feel a little grainy in your mouth, BUT, by grainy I mean that you can feel the texture of the powdered sugar.  And, you only really notice that if you are tasting the frosting when it isn't on a cake.

Hope this helps.

Here is a link to my video on making buttercream icing. Crisco will work, but high-ratio shortening works best.

The first thing I would try is adding less water to the icing.
Marsha, is it real humid where you are located? I love your video. I just make cakes for the kids and sometimes for the church when we have events.so, I only bake like once every 6 months so I  don't get much practice.I am making a cake next weekend the church is giving a shower to a lady in our town. Its just a round cake and I am kinda nervous about everything. The top will have a plastic baby (I finally found one) I was hoping to buy  a fondant or gum paste baby on line but couldn't find one on line other then Ebay.anyways, what do you guys think about the boarder on the cake? should I do balls which I am best at if they don't start running down or shells? which I have never done before? thank you again.

Shanna,

Where I currently live is not humid, but I started decorating in Houston, TX--and it can't get any more humid than Houston. I started out decorating to do my kids cakes also--but decorating has been my career for the last 30 years. Gosh that makes me feel old :)

For future baby cakes, this video I made shows the most adorable fondant babies.

Good luck on the cake next weekend.

Thank you Marsha, I am so nervous its unreal. I even get nervous writing about cakes as you can tell in my notes lol. Do you think I should use shells or balls on the bottom we (my daughter and I) are going to put round circles on the sides like dots then the baby with a fondant blanket. I do have the circuit cake my husband brought for me a few months ago which I have only used it 2 times tops so that is new too. He got  for me after my daughters b-day cake looked a mess and I cried for 2 days. Thank you again for everything.

Oh, how sweet that your husband got you the Cricut to help you with cakes.

I would put balls on the cake as a border--I think they would fit the child-like theme of a baby shower cake.

Be sure to share a photo of the finished cake.

Marsha

Make them out of icing or fondant? My cricut has past his life on a shelf. I wish I was creative. I have tried for almost a year now. I am going to keep on thought :) thank you again Marsha for everything. Oh with the pic I will try to be brave and do that but after seeing all the beautiful cakes on here I am always ashamed.

Please dear,  don't feel that way.  We ALL started where you are at :)  How lucky you are to have the cricut.......and

such a loving, understanding hubby :)

If you want to practice more make a cake and give it to the local police station OR firehouse OR nursing home OR elderly neighbor.  They would love it no matter what it looks like - easpecially on holidays when they have to work and everyone else is at home w/their families.  That is how you will get b etter at doing this.
