I'm pretty sure I have been providing too much cake based on Wilton's serving sizes.  I have looked through the discussions here and can't find anything that contradicts Wilton, but is the 11x15 sheet pan REALLY supposed to feed 60 people?  I know that if I went to that party, I would be pretty annoyed at the size of the cake slice! 

 

I have to do a birthday cake for 50 people and I was going to buy the half-sheet pan but if the 11x15 will do the trick then I don't want to buy yet another pan.  I don't want to short-change anyone ...is  it really enough to serve 50?

 

Also, I have a question - I can (but prefer not to) torte the 11x15.  Is the serving size based on ONE cake (whether or not torted), or TWO 11x15 cakes, one on top of the other?

That depends on the height of the cake. If you are doing the sheet 1 layer high or 2", then it should serve 41. Two layers, or 4" high would yield 82. Obviously, with the 4", your slices would be cut thinner.
I had the same issue with doing cakes for people here in Cayman. Caymanians have a NOTORIOUS sweet tooth...in my family a 9x13 serves 10-12 LOL. But what I've been doing with my clients recently is printing up the guide from wilton, and I explained the size of each slice. That way if they decide those slices are too small, they can order more cake. That way my clients can't really complain that the cake wasn't enough since they were given the appropriate serving chart for their cakes :).

I haven't seen any serving size charts for the 2" cakes - and would love to get my hands on one if anyone knows where to find it?

Just double check to see how high the cake is supposed to be....I think the serving size is based on the height of the cake as well. Here is the guide I keep on my favourites online...what I like about it is that it also tells you how much batter, the time it cooks etc. It gives you 2 different serving guides, one for two, 2" cakes stacked on each other (to make a 4" high cake), and one for a single layer cake that has been torted and filled to 3" high.

ok, I get it ... sheesh. I know I am no math whiz, but ... wtf, why can't I figure this out? I think I've been confused because Wilton says "2 layers" will yield 82 servings on the 11x15 pan, and I didn't quite understand whether 2 layers = one 2" cake, torted, or two 2" cakes, one atop the other. Oh PLUS - the Wilton website has the numbers I used above (60 servings for the 11x15 sheet) but the insert in the pan says 82! All this math makes me want to go back to a desk job...
LOL yes it can be confusing! Maybe you're looking at both wedding cake services and party cake servings?? Wedding cake servings are supposed to be smaller I think. Anyways, I think 60 for the 11x15 sounds like a decent amount. And I would make two 2" cakes (just to be on the safe side!) I can't imagine getting 82 slices out of a 11x15 cake no matter how tall it is! LOL. I hope that helps though, I'm still a newbie at all of this stuff, so still learning the ropes myself.

The cake should feed about 28 people, but if there is some carving, I think you should factor in the lost servings. Maybe make it a little thicker by stacking two cakes on each other before you carve? That should definitely give you enough to serve 25 then. I hope that helps!

It is rectangular (by the way i didn't know these were called *sheet cake pans* and the size is 11x7" and 3" deep.

Would someone be so kind as to tell me if this will feed 25 ppl.

I am doing a *cruise boat* and therefore it would need to be carved etc.
