Cake Decorating Community - Cakes We Bake

Hoping for some opinions from you.  My hubby loves coconut and wants a pina colada cake for his birthday.  I have a recipe that I want to try but one of the ingredients is coconut extract.  I have tried a few but hated the fake taste.  Anyone know of a good tasting one?  Thanks.

Hey, Goreti, I was looking for something with a good coconut flavor too one time, and the grocery store clerk sent me into the liquor section where they sell Coco Real. It's not a 'flavoring' but rather a paste used for Pina Colada drinks made from real coconuts. I don't know why you couldn't just add a couple to several tablespoons of that right on into the cake itself. I think I was looking for coconut milk for some recipe and couldn't find that, so used this instead. Just a thought.

That sounds good.  Although I like coconut, I really didn't like the extract I had.  I used it on frosting and I couldn't even stand the smell of it.  Gross

I made a coconut sour cream pound cake Goreti, and I bought a expensive LorAnn oil, and I thought it was gross. I made a batch of b/c I through out. I actually just bought the coconut extract from the grocery store, and it actually was pretty good. But Linda's idea sounds pretty good. At our local grocery store near me they sell "syrups".  Pretty cheap $10 for a big bottle, but it would take me 100 yrs to use up all that syrup.

you could also buy coconut "cream". It is thick, like condensed milk. Actually it is probably coconut condensed milk. I use it when making my butter chicken. I used it to make my cake, but just now, never thought of using it in my icing. Didn't think it would have a strong enough flavor.

I'm going to look into those options.  Thank you both.  His birthday is not till 8/5 but I wanted to get prepared.  He was very specific about the type of cake.  Even let me know he wants pineapple filling.

Where do you find that, June? That is probably what I was looking for way back when, and ended up with the coco real.

Most grocery stores here have a "international" section for food. We have a good one at a store just down the street. You can usually find it where the Indian food is. It HAS to be coconut cream, as it is very thick.

I didn't answer you about the cappucinno flavor. It was made by McCalls, a cake warehouse I go to. It is there own brand.

Have you tried using Piña Colada mix instead of your liquid? It has a great taste, I think.
